Salsa Verde
This simple green sauce is great as a topping for leftover cold meats, like roast turkey, tri-tip, other roast beef, lamb (add mint leaves), or pork loin.
Pulverize in a food processor:

lots of parsley leaves
a few basil leaves
garlic clove(s)
nuts (usually walnuts, but try others)
capers
hardboiled eggs
bread soaked in wine vinegar
olive oil
salt and pepper

you can also add quality canned Italian tuna (not the tasteless stuff canned in water)  or anchioves
